If you want max armor and health, take the shield from stocks and the legs from bfd.
You'd lose out on a lot of str which gives parry, so even from a purely defensive point that's a bad choice.

True, but 2% avoidance on top of what you already have still makes a difference, you also forgot about the ring from hogger (1.26 % dodge which does work on attacks from behind although not when ccd)which you'd get instead.You lose 13 str which comes out to less then 2% parry, unless warriors have a drastically different str to parry mechanic then pallies.
Edit: armor also isn't rng and applies to attacks made from behind you and when you are cc'd.
