Well, technically the more strength you have, the more parry you have and thus less melee attacks hitting you, and since intel does nothing for dks (havent thought of an intel build like some random people did in wrath...which was interesting haha) the strength will help you out more imo that...

^ what falkor said, if any mage pre or post cata cant pull above 8k dps in or outside of icc they have something wrong with them... and if they are an 80 twink then they should at least be pulling 40k-50k (well, as fire that is) *edit* Just remembered you are that one wotlk progression...
