Holy Paladin.
After playing a couple private servers at Vanilla-era with warrios (never got past lvl 30), I finally settled down on another privater server and decided to play the most exquisite combination that I could think - a female draenei paladin (those are blue alien goats!). Stuck around that server for a couple of years, healing people badly.
Finally at Blizzard in Cata, main'ed a Fire Mage from Cata to WoD (which was an alt in the private server), with another blue goat pally alt at max level. Then, at WoD's last tier I decided that I wanted to do raids, since they finally got that Looking for Group tool. And let me tell you, DPS can't get in PUGs quickly for shit.
Lannera is my de facto main for some time now. She got arena elite gear and all kinds of cool stuff laying around. What can I say? I dream of purging the wicked and helping the unfortunated.

Gameplay wise? WoD's
Frost Mage in Challenge Mode Dungeons.
For those that don't know, Challenge Mode was a special difficulty for DGs in MoP and WoD. It was very like the actual Mythic+, since you have timers. But you didn't get drops from doing it and all your gear were downscaled to a set ilvl to even the playfield.
In MoP, Frost Mage's were godly at the first half of the expansion for it. You had a timed dot called Frost Bomb that exploded after some secs. You could use Water Elemental's Frost Nova before the explosion to guaranteed a mass critical (and back then, our Mastery increased damage against frozen targets).
In WoD, Mages were shitty for CMs. Since gear gets downscaled, all mage specs suffered from it, since they were very secondary stats dependent. Frost Mages were the least worst ones, but you needed tons of Multistrike to get essential procs. And so I farmed... until every single piece had Multistrike and Haste (the best combo).
You had to pump out real aoe to get called for CMs. Frost Mages could do that by using Frost Bomb 2.0 and Prismatic Crystal. This new Frost Bomb was a casted debuff put on a target; when you hit it with Ice Lances /w Frost Fingers it would explode (but remember, procs were almost non-existant!). Prismatic Crystal was an exotic talent where you summoned a temporary Crystal NPC that you could damage and it would deal extra damage to nearby targets based on the damage it received. It only lasted 10-12 seconds, with about 2 secs being lost to casting Frost Bomb on it.
It was a very clunkly playstyle, with high skill gap and normal rewards. Sometimes I'd top meters; in others I'd sit at the bottom and loss to the OP aoe classes like Enhancement Shamans and Blood DKs and others not even that OP. But was awesome doing something it felt like no one expected to be possible.
I believe it was karma from how easy Challenge Mode was for me at MoP.
Elladaryn will be my main for BFA again, if this year is kind to me and allow it.

My favourite has been Holy paladin both 19/20 and end game raiding
The class has changed a lot over the years; changes to abilities, core class mechanics, and changes to mana/basic stats.
My favorite all-time combo:
