I never understood that EV'ing and EP'ing crap...
Just sold my Green, Heart Gold and some other Pokemon game to Game Stop when I was going to buy my Cata copy.. not sure how to feel about that one. I could always go take my buddies little brothers copy of SoulSilver if I really got bored and wanted to play badly, but I don't see a purpose.

EV is pretty simple, Effort Value. Have you ever drop a pokemon to the daycare and took it back after he lvled about 40-50 levels? And you're wondering why your pokemon sucks that much... Well It's all about EV. Effort Value raise your stats, If you fight a Quick pokemon, let's say Rattata, you will get Speed EV and if you fight High HP pokemon, let's say, hoot-hoot or Hoppip, you will get HP EV. In the first 2 Generation you could cap Every single Stats. The more pokemon you would kill the more EV you would get in 'every' stats, It was also called Stats Exp. Basically if you leveled your starter from 5 to 100 without RareCandy or DayCare, your stats would be all Maxed ( Maximum Stats Value Possible). After that, Since Generation 3, you have a limited amount of EV, 510. Certain pokemon gives you from 1-3 EV, you can't get more then 252 EV to Maximize a Stats. You can use Vitamins (Calcium Protein) to raise your EV (10 EV each Vitamins) But can't past 100 EV with these, Once you can't givevitamins to your pokemon anymore, that means he has more then 100 Ev of that Stats. You get 1 Additional Stats per 4 EV. My example, I leveled a Blissey and wanted a Max Hp one, I trained only with Hoppip (These gives 2 HP EV If I remember correctly) I had the Pokerus so that's x2 and had Macho brace another x2, so it was 8 EV Per Hoppip Kill. I got up to 252 HP EV and then Trained Spec Def. EV. Maxed My HP EV gave me 63 Additional HP stats (1 Stats per 4 EV). That way I could Max my Blissey HP.
Back in the first 2 gen this wasn't such a matter, but since 3rd gen it's really important if you want to fight seriously. There's some stats that are really useless to some pokemon and so, it's wasting Stats to not raise your EV correctly and raising these stats. To level EV you also need to take a look at EV list (Google That) You'll get Full EV list, that tell you all the pokemon EV gain.
Then the last thing, IV. Initial Value, Each time you get a baby, there's a random IV. It's an Hidden value, that will improve certain Stats. Since gen 4 you can Approx. get your IV from some in-game NPC. People that are the most experienced are always playing EV and IV Maxed pokemon. IV is affected by Breeding. If you breed X pokemon with X pokemon, you will get X IV. There's soe complicated formulas to get the approx right Breeding IV. The best way to look at your IV is to LvL EV a pokemon and then take a look at a IV calculator, they work with EV and Stats of your pokemon. That waay I found that my Blissey had Very very good IV (The max IV possible is 31 for every stats) My Blissey had 26 IV + Max EV Hp, at level 100 it had 709 HP. The max is 714 HP.
