Yes, for a long time F2P were "artificially" capped, meaning they were only bound by the Gold and Level requirements, and could go up to beyond 300. It showed a lock, but that didn't stop the professions from leveling. F2Ps also had access to Archaeology and could craft higher tier items in Primary Professions. Nowadays, they hard cap all professions at 100 for F2Ps, severely limit the items they can make and have removed archaeology.

Yes, if you do a daily that awards any points towards that profession you will drop back to 100. I've had fishing and cooking both drop by doing either the DMF dailies or the SW dailies.
Whatever you do, don't do a daily or say hi to your new profession lvl 100

Fairly certain it was both, maybe they hotfixed it? I've had it on several Vet's and I remember some F2P's said the same thing happened but this is going back at least a year. So I'm sure it was all non-sub's that were affected. Maybe something has changed recently but I don't want to be the one to test it. It's possibly a "you logged out in a rested zone" thing, as I've used that method to stop my few remaining chars from getting hard reset from doing Pilgrim's Bounty dailies. However, I'm not about to test it further with the dmf / capital city dailies, as this was precisely how 80% of my chars' skills got hard reset when 6.2 came out in the first place (and I'm like 95% sure I logged out in a rested zone after I did the dailies then, because Midsummer was in full swing and I always log out at the Darnassus bonfire, which is rested zone).That's weird been doing my dailies for like weeks, nothings changed.

Heh, already did. With 700 Fishing and no Pole I was catching no junk at all, just fish and Crates. However, whether I fished in a node or open Water I caught no Bloated at all. I spent about 20 min Fishing DMF last night. If you do anything that will increase your skill level while being over 100 skill on trial or vet account - you will be caped at 100 once you relog. Was like this on EU. Do not believe they fixed it as before it was not working as intended.
I Do have few f2ps that could potentially test it but that wouldn't be any good source as more people needed + there is no way i ever fish or do proff dailys again on starter with fishing boots & all poles. thus who cares.

It's possible this happened but I've just done them for weeks without any regard for where I loged out.
I have done both DMF quests and dailies and relogged and nothing happened.
Am I the anomaly? Could my toon's age have anything to do with it? Has anyone had this happen on a toon that leveled those professions years ago?

It may have something to do with location or only selected accounts are effected. maybe EU just trippin. Dont know.
I know i had 225 engee droped to 100 by doing DF proff quest on one account where GM couldn't do anything to help and other different bnet account where fishing droped by doin SW daily quest.
All that happened some time back. Maybe it is not the case now.
You could be anomaly or you just dont get "skill up" by some reason and that's why it don't drop you.
Don't think age of account have anything to do with it as one account had fishing since cata.
Regardless, it does not mean that one day it wont drop for you. (just like balls)
So watch out what you do. Just like with exp turning on itself.
