With regards to Vet's I can only give you an idea about BM Hunters and Fury Warriors. I don't really play my Mistweaver that much. So here goes on the other 2 classes I play at Vet level :-
Fury
You actually can push out some serious DPS with Fury. For 1 v 1 situations you can do some big burst damage when you get your procs. Only problem is trying to stick on kiting ranged classes can sometimes be a challenge, but if they are out of escapes and you get in range then you can open up a big can of whoop a$$. I generally play a bit more conservative and pick my battles in bg's because if you charge into a pack you usually won't survive long. You have no escapes. If you have a healer healing you, then get in there and just carve up, but without a heals you will find yourself either dying quickly or a little frustrated that you can't just charge in all the time. Arena is quite good as you can drop a target pretty quickly if you get your procs. You are a little at the mercy of RNG as Fury. But I love seeing the big two-handers cracking skulls when you are on a target. You also have the slow shout

http://www.wowhead.com/spell=115804/mortal-wounds which is essential against healers. For straight up smashing, Fury is awesome but you will likely get frustrated with so little escapes, but in the right team with good backup you'll be a killing machine.
BM Hunter
This is my preferred toon for Vet. I am probably a little biased as I used to main a BM Hunter till I cancelled my sub over a year ago. I'd play any Hunter in this bracket but obviously have a soft spot for BM. I prefer the Hunter as it is better for solo play. What I mean is you can generally escape from situations a lot easier and you aren't so reliant on your team mates to help out. You can still put out a lot of damage, but not as bursty as Fury, it's a more sustained damage. Keeping melee targets slowed with

http://www.wowhead.com/spell=56641/steady-shot to regain your focus (this is for BM, obviously you'll rotate through other abilities as Marks or Surv). It is important to keep your pet on your targets to keep up the DPS. I keep the pet spec'd Ferocity as they hit harder. For PvP it's also good to have
http://www.wowhead.com/spell=55709/heart-of-the-phoenix. As BM you really want your pet hitting as hard as possible rather than some of the other abilities you forgo by choosing Tenacity or Cunning. If your good at kiting you can take down most classes 1 v 1. Some 1 v 1's will be long and drawn out, but learn to kite and you'll make a lot of enemies as a Hunter.
The BM Hunter has kept me entertained for some time as a Vet. The Fury and Mistweaver I can get bored of if I play them too much but I always enjoy playing a Hunter. That's just me.
