I disagree with duel SFs for stamina set as the damage differance between Venerable Mass of McGowen and Shadowfang is minimul though you gain 80 extra health with the Venerable Mass's

I personaly prefer a dagger MH when FCing for the extra RNG but if you want extra damage i'd advise duel maces

daggers swapping should ALWAYS be situational unless you are a full time dagger rogue, so it shouldnt matter if you are FCing or not whether you bring out the dagger depends on the type of opponents / the situation you're in.
