It has previously been stated by a blue that quest logs will be reset in Cata. I guess this means that 2 Seals of Sylvannas will be available for fc's? Any other items out there that its worth getting 2 of?

I'm quite sure it's just the maximum of 25 quests that are in your quest log that are going to be reset, I don't think you'll be able to pick up all the old quests any more if you've completed them. Besides that, most will be removed aswell and replaced by new quests.
