Profs for holy pally?

So guys, what are the best profs for a 70 holy pally? I gem/enchant stam for survivabilty, i run with a rogue in 2s and a rogue/ele in 3s.
 
Simply Engineering + Jewelcrafting.
Engineering for a tinker of your choice, for example to help you burst with Harsh Word.
Jewelcrafting for more stamina and survivability.

The thing I have with jewlcrafting is it gives 3 51 stam gems, so 51x3 = 153 - 90 = 63, so you get 630 hp from jewlcrafting. If I were to go with leatherworking I would get the 103 stam enchant to bracers, which is 40 stam more, at the price of a 23 spellpower enchant. Even if I were to go with mining, I would only get 3 less stamina. So is there any other benefits that would be worth it?

After finding a different bracer enchant I see why someone would take jewlcrafting over leatherworking, but my question still stands.

40 stamina trinket from jewelcrafting trinket, serpent something, got it on my paladin and also 81 stam from engineering trinket + a tinker for more burst
 
I've grown accustomed to Jewelcrafting And Engineering, especially for holy. There's a few reasons for that.

JC has of course, the specialty gems, 34 resilience, 51 stamina. Most Paladins arguably tend to go blacksmithing for SWP plates, or it tends to be cheaper than leveling JC itself. Although this trinket is what bought me over.

So not only will you have the statistic boost from said gems, you'll have a trinket that'll give you a decent chunk of health and intellect. Accompanied by Engi trinkets and other tinkers. The most notable trinkets being~

Gnomish Lightning Generator - Item - World of Warcraft

Reforge-able as well, tend to go for either haste ( Holy ) or hit rating ( Ret / Prot ) depending on what spec I'm running.

Sonic Booster - Item - World of Warcraft

Even for the large amount of stamina the sonic booster has, I'd still suggest going for the noise machine. 54 intellect tends to have a noticeable effect for shocks and FoLs, not to mention it has a 1.1k absorption ( Probably a bit less in PvP, I can't recollect at the moment. ) Sonic Booster is there if you still want to try it for Holy, but it serves better for either Ret or Prot

Aside from trinkets, Engineering does offer a variety of tinkers. The one I've preferred ( Even over Cata tinkers ) is this,

Hyperspeed Accelerators - Spell - World of Warcraft

240 haste is a healthy amount, especially if you need to hard cast FoLs off or DL infusions to top people off.

No, I didn't forget to mention the rest of the Engi tinkers, although they lose quite a bit of effectiveness when 5.4 comes to pass, this is based off a chart Aelobin wrote from PTR calculations.
