Inscription: Very good shoulder enchantments but the +30 Stam +15 Resilience is pretty dang good if you choose not to get it.
Engineering: Always a good choice, plenty of toys that make you strong. However some of these abilities aren't usable in arena. For some of us, that's a HUGE thing. Engineering is always viable for BGs but if your a hardcore arena-player at 70, use a different profession than engineering.
Leatherworking: Great Enchantments for legs/bracers, however if you choose not to get them, the WotLK enchantments still are good.
Alchemy: The Potion buff from the trinkets are good but IMO the BC trinkets from raid instances/pvp-venders are better.
Other Gathering Professions: Still good and viable.
I probably shouldn't say that BS/JC are the BEST for healers at 70, however they are definitely viable. BS opens up 2 additional gem slots and JC gives you 3 unique gems that are potentially 60% better than normal gems. Now personally, I don't feel the NEED for engineering, the toys are fun no doupt and even give you an upper hand against other classes in certain situations. But Engineering more or less is a BG profession at 70, it's less viable in arena. And even if you don't get engineering(for the enchantments/item slots) the BC(items) and WotLK(enchantments) are still pretty decent. I was considering getting Inscription even however, It did not work well with my character planar.
