Profession Changes for Starters?

With the new changes to professions in BFA, is the skill cap still locked at 100 (I think that's what it was last time I played). Or is later stuff also available now too (Eg: Northerend engineering)?
 
There was a trick for Pandaren Cooking. It might still work actually, I am not 100% sure, because when I picked up the recipe(s) from the NPC in Halfhill on a character who only had 80ish cooking, the Cooking Progress Bar changed from "Cooking 80/315" to "Pandaren Cooking" and the numerical value was 0/0. I am going to max out vanilla cooking (115) on that Starter Edition Panda to see if it unlocks the numerical values for progress in the Pandaren Cooking category.

The two NPCs who teach Pandaren Recipes without Pandaren Cokking requirements are:

Just went to Halfhill with my lvl20 vet, which has 116 cooking.
I could learn 2 recipes from Sungshit Ironpaw, and even buy the mats to cook them, but they don't give any skillups and pandaria cooking stays 0/0
Pandaria Cooking itself costs 40g and requires lvl78
the cooked food Blanched Needle Mushrooms has a lvl85 req

Outland profs are lvlgated too, lvl58req

I have GFd cooking. You can’t progress past a certain point in Pandaria Cooking, because all recipes that provide skillups require picking a way, and you can’t do dailies or DMF for skillups because that resets the GFd profession.

I've actually been doing dailies and DMF since BfA and they don't seem to reset either my fishing and cooking... they all at 375. But I really wanted Cataclysm and Pandaren cooking. Got Outland at 75/75 and Northerend at 65/75 (need more epicureen awards, thus dailies)

U should be able to get Pandaren cooking by purchasing the recipes from the vendor. But u can only level Pandaren cooking if u purchased the recipe pre-8.0.

I have GFd cooking. You can’t progress past a certain point in Pandaria Cooking, because all recipes that provide skillups require picking a way, and you can’t do dailies or DMF for skillups because that resets the GFd profession.
I believe u can level to max Pandaren cooking if u have the pre-8.0 recipes. @Kórnikus20 did it by getting exalted with tillers and purchasing those recipes, these ones will take u to max.

Good to know! I doubt that I'll stick with it, but still good to know.
