For pve, things die very quickly so I funnel everything into crit/haste. I keep them even and vers for the rest obv.

The stat weights are all very close so it really doesn't matter

In regards to 10 MW, the following question:

When spamming crane on packs, which would result in more Lifestealing procs?

Garrosh 1h at 2.6 (with socket offhand)
Or
Garrosh staff at 3.6

Statewise 1h wins but 2h speed might still be better?

Alternatively naralex 1h with socketed offhand could be nice (especially if you don't have garrosh heirlooms). But only if the speed has an impact on Lifestealing procs?

it does, lifesteal is PPM. slower speed = more procs.

2i2h gems, get crit from gear but you should focus on vers gear. Crit isn't as strong as people think it is.

Vers is a constant. Crit is only good if you crit.

Short answer is they all work fine. It really just comes down to personal playstyle and feel. For me personally, crit provides the smoothest gameplay. Vers is the Switzerland choice and in my opinion the most overrated stat in the game. Have a couple pieces of gear with haste on it and it'll be enough to sustain you. Any more than that and all it accomplishes is making you spam buttons more often.

I got lucky and got a blue Naralex 3.6 1h, but not sure what offhand I should go for. Does it really matter or should I just find something with a socket and the best stats?

I do not know. Not a monk expert. I ould assume something socketed since OHs are mostly just there to be a stat stick.

Alchemy/Engineer

Max Classic Alch at 300 for the permanent flask.

The usual go to tinker for Engineer is the Northrend Frag Belt. Does great AOE dmg on a 1 min cd. There are other fun niche belt tinkers too from various expansions.
