You don't have to just flip items, the best trades are often value added crafts. If people aren't regularly posting everything (which even on my server is the case). You can offer item liquidity and make good money, yes you'll need to first track down crafters for things and maybe befriend them or at least not make them upset.
Items off the top of my head that might be worth having crafted: Swiftness Potion, Free Action Potion, Lesser Invisibility Potion, Sniper Scope
On a server like that many things will be hard to obtain on the Alliance side, go to forums, make a friend from Horde side and import things for a profit. As a bonus you'll probably be able to track down things you're having troubles finding : )
