That's because Skype does all the optimization for you instead of letting you tweak the settings yourself.
With the right Mumble-configuration you should be able to eliminate any issues like the one your friends are having though.
If you ever decide to try the fix that I named above, please let me know if it worked. I'm fairly sure it will.

When they're on, I'll try to get them to try mumble again, Last time we did (months ago) they were pretty much done with it .

Hi all, I'm Sarah. =) I am starting to try battlegrounds and thought it would be easier with voice chat instead of trying to read the instance chat in game. I'm connected to mumble and no one else is on. I'm violetress, and I have skype as well. I play both alliance and horde on Aerie Peak. I'd love to do some form of voice chat, even if it's just dungeons or general questing. On mumble, I did have trouble configuring the mic settings, but I think it's working now and I'd like to test it. How do you guys coordinate when people are going to be on and what you're doing? I tried asking in the f2ptwink addon channel but no one responded on either side. Would love to be part of this!
Btw, Sarah, did you ever fix the problem with your voice "breaking"? :O

And I agree with Pleya, your best bet is bringing people over to play/talk with you. I don't think many guys on Aerie Peak get on mumble (at least I have just seen a couple, and this was months ago).
I don't think anyone really coordinates to get on mumble. On mixxxar we hardly ever use it. I use it with Rhae 'cause I dont like using skype and WoW at the same time, so when we bg we're often there (not really coordinating the bg, just talking about stuff haha)
