Earthshock doesn't interrupt casts.
Just measure the distance between you and him, and the shock cooldown and you can manage to poly either one.
Of course you won't always land it, they have 2 interrupts with short cooldowns (10secs and 6 secs) but it's managable, specially after a Psy Scream from Jazz.
But I think the matchup is in the favor of the Priest/Mage. It's too much damage and a blanket silence can win the match easily. I'd suggest going arcane tho in arenas for the blanket silence and the greater mobility while doing damage.
