Haven't played this bracket for a long while just wondering what classes are viable/fun now.

All classes can be fun and viable for the most part. Depends on what your interest are and how you plan on using your twink.

I did previously roll a hunter, I did find it fun however I've noticed that there is a huge surge of them.

Mages are fun, but dont get complained about usually. Shamans and druids will be buffed in MoP, but are lacking right now unless you have skill. Warriors are fun, but arent exactly viable, not sure about MoP though. Hunter, rogue, pally, and priest are overplayed, but pally and priest dont get complained about too much.

Play what you like or enjoy the most regardless of that class being OP'ed or UP'ed,
and put your heart and soul into it and you'll do fine,
