no need for all that stam, better off gemming for threat or avoidance imo (and most likely mastery in cata slots). plus you need more cata gear overall, like razs breastplate and shield of the iron maiden for starters.
ill link two just for comparison, but im sure there are other slots you could upgrade as well w/ cata gear.

Funny thing is, it doesn't even have that much stamina. Both set bonuses for t10 are marginal at best (Paladins had the worst 4set, and tank metas aren't so useful), so you're probably better off going with full, or close to full cata gear. Which gives you so many secondary stats that you can cap CTC with 30% avoidance, get hit and hard-expertise caps, and around 20% crit.
http://chardev.org/?profile=291740 For reference. 57 expertise (1 overcap), 8.13% hit (0.13% overcap), 24.5% crit, 4% haste, block cap (11% dodge, 22% parry, 63.63% block for 102.74%, 0.34% overcap). and 72k hp to boot. Swap gems for str if you wish.
Now for retribution. the 2pc t10 bonus was strong, and the 4pc not so much (at least with cataclysm judgement changes) That is an individual choice, but I've left it out. This set has the helm+ chest with offset icc25H gloves/legs (haste is more useful than hit for ret), and has 30 mastery using DBW and the alchemy trinket (skipped the gem there, some choose 25 str 25 mastery, others 50 mastery, so the actual mastery is slightly higher). Naturally whitefin axe, and capped hit/expertise (12 wasted points in hit, but it's hard to cap exactly, even with reforging)

As for holy, there are chardevs mentioned in the topic for it, but I'd suggest focusing crit with as much resilience as you can (might want to use the chaotic meta, depending how you fare on mana regen/surviving silences). 2pc t10 is also an option, as it's extremely powerful. If you use it, use helm/legs, with the remaining set pieces as wrathful. I can make a chardev if you want one, but PvP is much more down to personal preference (especially with the wide range of available gear to level 80s), so it might not be exactly what you want.
