69s get more gems, some specs get a useful ability, that's pmuch it.

My 60 rogue has 15 sockets. How many more gems could a 69 get? On another note Is stacking versatility gear significantly better than crit and so on?

69 gets you more gem sockets more mogs more engineering benefits you will be overall stronger. The only notable loss is the crusader enchant buff is weaker but it’s made up for in rawr gem stats.
