If you're looking for a DPS set with a little bit of expertise, [item] Gloves of the Fang[/item] are the much better option - youll be using Fang legs and Chest anyways for a DPS set, so GotF is a direct upgrade over Nimble - and actually easier to come across.

Iv'e been using Smites Mighty Hammer with Crusader enchant for ages on my warrior (lvl.19 ofc) and now i feel like speccing prot and start using Butchers Slicer and redbard crest instead.

Just wondering, what enchant do you prefer on a prot warrior?

Iv'e been thinking about lifesteal but i don't know really how much and how often it heals, so does anyone know?

Usually, you should roll with CB w/ crusader than BAR with +15 str or something like that if your a cookie cutter.
