I think the summary of the changes so far is OUCH! With soloing taking a big hit.
Overall what happened was everything was given a lot of stamina, both for players and for mobs. The main effect this has is that the contribution to your damage from enchantment / procs / on use effects is greatly reduced, to the point were healing effects from things such as lifesteal/mending, trinkets, potions are reduced so much that things you might have once been able to solo are now completely out of reach. Even for things that are still soloable, the time it takes to do them will take at least twice as long (though in most cases way longer than that).
As far as Timewalking stuff goes, if you're in a group things will still go relatively smoothly; but the increased health pools will make clearing them longer. My level 11 fury warrior was still doing twice the damage of most of the level 80s, though some of the better geared ones were matching my output. Stacking main stat is once again not advised for TWing. Soloing TWing dungeons is still possible for some classes (least for the level 11s),
Sad times as movement speed took a massive hit, to the point that you basically have to use a SL gem in every possible socket slot in every piece of equipment and still be short of capping run speed. Will need to do some testing to see how much of a trade off it is to use SL gems vs pure DPS gems with changes to damage output and enemy health pools. Currently best to have a https://www.wowhead.com/ptr/spell=256691/straddling-viridium somewhere for +6 speed, as the SL gems only provide +2 speed each. Expect your characters to only have +10-20% speed unless you really stack it, and even then you're probably only going to end up in the 30-40% range.
Transmogs also took a bit of a hit. If you have a lot of alts, the new system is going to be a pain to get your characters back to the way you want them to look, most of my characters are basically wearing clown outfits ATM. Full transmog is over 1000 gold, which is of course more than we can hold at a time, so you have to do things piece by piece, character by character (So I hope you all have a good amount of gold vendorables stored up!). The upside at least is that it doesn't matter what gear you use you'll keep the appearance, and you can drag outfits on your bars now and swap outfits with a single click. The other downside is you can no longer transmog gear pieces that don't match your class, as previously you could hide or transmog non-main-stat gear (which you might end up doing for TWing) to appearances that could be applied to all types of armor (Like holiday appearances); so your TWing gear might have you looking like a Vanilla hobo, and no way out of that!
EDIT: The cost of transmogs seems to have been corrected/lowered to something reasonable for the level you're at.
EDIT2: And the cost went back up again. No clue what's going on with that.
With the increased health pools, PvP might become a thing again if the one or two shots are gone as a result; but I don't have any particular desire to poke my head into that to find out for myself, I'll leave it to others who still PvP to report on how that shakes out.
