How difficult is it

How difficult is it to obtain the Defending Champion or the Returning Champion?

I rarely play at level 120 and my character is poorly geared...

Are there any tips or tricks to getting these or is it just a mixture of determination, luck and timing?

Defending Champion

Is super easy to get on less populated servers just park a toon at Gurabashi Arena and log in when the chest pops. I did like 6-7 solo agms on oceanic realms. Occasionally you'll get killed but eventually you get it.

edit - hell you might even be able to park a class trial there and do it that way

Returning Champion is gonna be a pain though. The reason why is because it's only obtainable during DMF (through the death match chest, similar to AGM). I haven't tried recently but I personally feel as though soloing that one would be nearly impossible considering XRZ also affects DMF.

DMF can be a bit aids without running a geared, fotm 1v1 class at max lvl.

Took me 1.5 DM faires to get it on a 105 warlock. Just use a low pop realm and turn off warmode.

Yes, but it's not as easy as it once was. Ever since they fucked with server hopping, it's been mega aids.
