Are there any professions useful for PvP at this point?

Obviously engineering doesn't help anymore, would alchemy help?

Are there any worthwhile elixirs to stack/use during BGs?

Engineering is the only worthwhile profession for the higher ilevel gear for Parachute Cloak, Mind Control Cap, ilvl 42 trinkets (Death Ray and Net Gun), Protection Belt. Protection belt is BiS for Leather. Mind Control for Cloth wearers.

As for Elixirs, I don't use any personally because I expect to die several times during any BG, especially since stats are equalized, But DMF pots are pretty good, there is also a stam pot that increases HP by 100, which is nice, but none last through death.
