I swap between my sets all the time (Higher armour & Lower) throughout casual games i usually use my 'better mogged' set, but when doing more serious games ill go high armour just incase it makes a difference xD
Also you can use Nobleman's Coat, Nobleman's Pantaloons, as a transmog to any armour type!

If you truly want to be t winked, you should try for maximum everything. It really is simple as that. Some people would grind for hours upon hours just for that extra 2 armor on their gloves because they would get ridiculed if they did not. Or at least they used to. Those days are long gone I suppose now. That extra defense percentage could save you.
The DMF pants can be transmogged to any armor type if vanity is your thing. They can be bought and sold on the AH if you do not have enough tickets. I have sold quite a few pair as a matter of fact.
The mail chest is covered up by a nice tabard. A tabard with gold in really matches the DMF paints well. Because the DMF set has gold filigree. I generally tend to wear my Competitor's Tabard with them.
Dalaran has some nice shirts with gold filigree as well if you want to pick up a matching shirt.
