If you are playing a lot of solo then hunter will be a good option. Lots of mid control, you can get a way from most situations if you want.
Enhance shaman would be more fun than solo Q as priest or warrior also IMO. You can spot heal a few times if needed to help FC and again more mobility to make choices to join or leave fights as you see fit. Plus WF and purge feels great.
With groups and heals warrior is strong af and fun af.
If you like to support others priest will be able to swing a lot of pug games and play a big role when you group Q.

Those are all fun classes. Priest/Warrior obviously work best when paired up, but I think they're still pretty satisfying solo. Warrior has to be one of the most exciting classes hands down, but it can be frustrating if enemies keep their eye on you.
Hunter/Shaman are some of the least reliant classes and can basically do it all, so you can't go wrong there. Hunter is the supreme solo hero choice imo, mostly due to tracking but also thanks to your really well rounded kit @39.
