A little advice on specs/comps :D

So here's the deal. Me and my friend are getting a bit bored of 90 and so wanted to make some 70 twinks to play around with. I've decided on playing a monk, and she's gonna play a pally. So here are my main questions and requests...:

What would be the strongest specs for us if we want to do 2s, aiming to get maybe 2.2k (we're both 2100, want it for arenamaster)
Also, we'd love to run 3s, so what would be viable comps to run with the specs mentioned from question 1? Aiming 2.2k for same reason.
Lastly, would you be able to provide us BiS armories of the specs from question 1? Since we have no idea how to gear, it'd be a big help!

Mistweaver monk is great, good for countering (especially bad) rogues.

If you go mistweaver stamina-stacked with prot paladin you should be able to get 2.2K, especially if you have experience at real arena (90) since more than 90% of the people you'll meet have never done arena on any other level than faceroll level 70.
