Unless you literally do only premades, and play the most FOTM and fully BIS class/spec each time with an army of pocket healers like Bajheera or something. Even then it's nuts.

Yeah, I think WSG really captures it. Almost every bracket of twinks has historically been involved in WSG (Sans ones who can't do BGs, of course), and it also just is a great looking picture and area.

So about the banning DS/Hearth, I think you should not - just to keep things interesting and extend things as long as you can. I think an "Oh, shit!" button is fine when you are just utilizing class mechanics. Obviously broken things like the two Shadowlands trinkets I'd say probably would be...
