on a more positive note, I feel like this thread is a great opportunity for me to pay tribute to uncle ben's rice and share the sacred recipe my grandma used to make for me every single sunday when I was a kid, it's a garlic chicken & rice recipe so the degree of difficulty I would say isn't too high so all of you can follow along with me
firstly, the ingredients you're going to need are the following: 3 cups of seasonal vegetables whether that's spinach, peppers or mushrooms (pick your favorite), 2 teaspoons of olive oil, 1 uncle ben's ready rice long grain & wild, 4 chicken breasts no bone no skin, 2 tea spoons of salt, ½ teaspoon of pepper, 1 teaspoon dried thyme, 1 teaspoon onion powder, 4 cloves of minced garlic, ¼ cup chicken broth, ½ cup heavy cream, zest of 1 lemon, juice of half a lemon, 1 & ½ teaspoon of mutard and minced parley
moving on towards the practical part, you want to first slice the vegetables into bite-sized pieces followed by heating the olive oil in a medium pan. proceed to add the vegetables in the olive oil, saute for 3 to 4 minutes and add salt and pepper. continue with adding uncle ben's ready rice and mix it in with the vegetables for 1 single minute and then remove from the heat and set it aside. drizzle olive oil on the chicken breasts then evenly coat with the salt, pepper, thyme and onion powder and proceed to sear the chicken in the pan for 3 to 4 minutes per side. in the same pan, add one more teaspoon of olive oil and then the minced garlic and saute the garlic for a minute. add the chicken broth, heavy cream, ½ teaspoon of salt and a big pinch of pepper. bring it to a light simmer then stir in the lemmon zest, lemon juice and the mustard and let it summer for a minute. add the chicken breasts to the sauce, cover with a lid and cook until the internal temperature of the chicken is up to 165 Fahrenheit. remove the chicken, let it rest for a few minutes then cut it up and throw it back into the sauce. place the rice and vegetable mixture on a palte and top it up with the chicken then drizzle it with the extra sauce on top. throw some parley into the dish and you're ready to go!
