Alternatives to Vendetta for rogue

Doesnt drop for me. Doesnt drop at AH either. What should be on my short list in the mean time? Is Bite of Serra’Kis second best? (Apart from the chance on hit..) How vital is it to have a super quick offhand?
 
No rep yet for WSG blade. Doesnt the cross dagger have too low dps? My server is kinda dead so Im mostly looking at daggers with a fixed droprate from a boss.
 
Since you haven't mentioned Outlaw Sabre I'm guessing you're Alliance. You could farm Prison Shank easily, it's a solid offhand. Honestly I think speed is next to meaningless when it comes down to it. You might get a few more procs here and there with an offhand, but slow weapons have their advantages as well so I would just look for stats.
 
With a fixed drop rate from boss, I'd say Torturing Poker would then be your best - some people like Toxic Avenger or w/e it's called, but the proc can break gouge / sap.

Also, offhand is less focused on DPS but rather attack speed (not saying to ignore DPS, but quick attack speed = faster poison application)

Which is why Falaris' suggestion of the Cross Dagger being the choice weapon is good, because quick attack speed and the +power component benefits your MH damage.

Been a good 13 odd years since I’ve touched a 29 rogue. What spec should I be going for zealots blade? Combat or sub?

Any OH weapon without stats gimps your main attacks. Dual wield white attacks do half damage and miss 24% of the time. The offhand doesn't get the benefit of special attacks which only have a 5% miss rate. This is why offhand procs or dps don't mean much.

Any weapon will proc poison at roughly the same rate, because the rate is normalized by a weapon speed modifier. Yes at a certain point, let's say if you have a 50% base proc chance, faster weapons will get you more procs because a slower modifier could put your proc chance past 100%. Crippling Poison has a 30% proc chance so even with the slowest offhand (2.8) you're looking at an 84% chance of applying Crippling. A slow weapon will actually give you a higher chance to apply poison on your first hit because your first attacks only take .5 seconds to cast but you'll be given the slower weapon modifier, increasing proc chance.

TLDR: Weapon speed matters far less than people think.

15 agi seems obvious as enchant for OH. But what about MH? I have Claw of the Shadowmancer and Zealot Blade as my main hands. Which enchants are reccomended?

Claw +5 Weapon Damage, Zealot either Crusader, Lifesteal or Agility depending on what you like most. Crusader is very rng, but still excellent, Lifesteal is super reliable and will account for like 5% of your damage while Agility is of course the most consitent, boosting your Crit, AP and Dodge at all times.

0/8/12, 15/0/5, 0/15/5 are all viable dagger specs.

For swords the only other viable spec for anything valuable in 29 is 18/2/0 strictly for premades.

Not into it. Subtlety sucks until you can sink more points in it to boost stealth movement and effectiveness. Without Blind and Preparation you don't have enough resets to utilize ambush properly.

I would go 5/10/5 myself, it will give you huge damage without relying on stealth attacks. It's probably the most consistent burst in the bracket.

I haven't personally done any testing on it to know for sure, but from what I've seen poisons are a flat proc chance independent of weapon speed (vs. the ppm system that does scale with it)

Some calculations from @Shmuckumpoo in discord awhile back ended up pointing toward an extra 5-6 crippling procs per minute with vendetta OH vs Outlaw Sabre.
