bored and need some ideas

I am looking into making a 111 pve twink, I was wondering what a good class would be that is very self efficient looking mainly into tank spec or dps, also whats a good server, i dont see many 110/111s

I'm not sure what the point of a dedicated 111 PvE twink is, but that's neither here nor there. Any class should work, and with the gear you get as a twink you should be able to pull massive groups in dungeons/island expeditions. DH is probably the most optimal due to high innate leech keeping you up in dps spec, and high burst aoe.

In terms of more challenging PvE stuff as a 111 - you should be able to solo most legion raids on normal/heroic and some on mythic. Legion mythic dungeons are a joke. The only stumbling block even in Mythic raids is boss hp which doesn't scale down to raid size of 1, and of course certain mechanics that necessitate more than 1 player to be present.

For example, other than the few that do need a group, I was able to solo Glory of the Legion Raider and Glory of the Legion Hero on my 111 druid. Some were tricky, but overall good fun.

I've tried soloing Mythic Antorus, but I can only survive it in bear and it takes forever. I remember being able to barely beat Garothi's enrage timer. Didn't have the patience to try more, but I can see some other Mythic ABT bosses also being doable.

the only other class ive seen thats able to clear an island expedition faster than a dh is paladin. cant remember if he was prot or ret.
