you got a lot to worry about, luckily its not really all that confusing.
Quest rewards and some rare drops can proc an upgrade to rare or epic. You get one shot. if it doesnt upgrade, sorry.
Luckily, the BG crates you get for winning a BG can upgrade to be as good as epics. So if you lose out on epics, no worries. Youll be just fine.
There are some exceptions, as the occasional quest rewards will scale to be rather weird. Like, fallen apprentice robes and xakxaks lab frock are two cloth chests that have weird stat allocation that makes them desirable.
But, more or less, youll be fine getting dungeon drops if you want. And then just queing BGs for crate pieces.

if you want to check around to compare stat profiles, there's this thread https://xpoff.com/threads/quest-gear-depository-1-60.88692/ & just scale to ilvl32 on wowhead, and compare it against bg crate rare upgrades or gear you already have
