Last Professions to Learn

Just completed my engineering trinket this morning, and got as many things gemmed/enchanted as I could with what I have so far. I still need to get my legs enchanted with Pandaland Leatherworking but wanted to see if I could get a little input on what most players use for their professions when they feel they are near the end of twinking their toons? Is Engineering or JC the go-tos? Is that what allows them to slow fall with their cloaks? Is JC the only way to add some sockets to their rings?

Jewelcrafting is mainly used to prospect adamantite ore and make steady talasites. Other than that, the usage will be defined by your build. There is quite the variety of gems you can obtain. As for engineering, it is definitely one of the most important professions, if not the most. It allows you to tinker your cloak with a glider (the slow fall you mentioned), belt with grenades, heal, shield; you also need it for the ghost dragonling trinket and the socketed goggles if you go for those. Quite mandatory to have engineering really. Jewelcrafting can be dropped after you're done with the gems you want.

Generally, the "endgame" profession combo is engineering/alchemy for the majority of people. The reason for that is because the tinkers and things you make off of engineering require you to have it in order to operate them and alchemy has https://www.wowhead.com/item=75525/alchemists-flask, which gives +9 main stat, scaling to +12 in BG's. Important to notice here, however, is the fact that the flask requires vanilla alchemy 300 to be made, but only a level of 1 to be used. That means you can safely drop alchemy after the flask is done and work on whatever profession you want to, then drop it and pick up alchemy again.

Is JC the only way to add some sockets to their rings?

No, socketed rings come from pure grinding. It's an upgrade proc, you can't control when it happens. All you can do is genocide legion hyperspawn spots in hope for a ring to drop and upgrade with a socket. That is usually done with a character that is either level 24 or 25. I recommend the kobolds in Skyhorn at Highmountain, pretty solid spot because it is compact. There is a shit ton of mobs to kill, they hyperspawn like crazy and you can easily pull packs and packs. There is not much need to walk around like a madlad. I recommend Arcane Mage for the job, the spec decimates trash packs in no time. If you feel like the mana consumption is too high and you have to spend time eating food, then go Frost. Blizzard is excellent to control and AoE down big packs, as well as Ice Lance being a phenomenal tool to pull mobs fast as a motherfucker.

Slow fall is from Engineering, but with a Garrison u can make an endless supply of gliders.
My preference is Alch for the Flask, and I like Engineering for the belt tinkers.

Its noted in the F2P Baseline guide but its buried a bit so i'll repeat it: use wow-perofessions.com guides (vanilla, *not* classic) to stock up on mats. Get about 120% of their recommended amount just to be safe. So if you need to, say, level blacksmithing for weapons stones, you would drop alchemy, pick up mining, hoard mats, drop mining, level BS, make your stones, drop BS pick up alchemy again.
 
In regards to the leg enchant, is the way to do this is to skill up Pandarian Leatherworking to 75 to then enchant legs with Shadowleather Leg Armor, at which point it can be dropped, or can it bought from the AH at a lvl that is usable by a lvl 20?
 
Well, it means you could take another profession instead of engineering...
you always take engineering, though...

Is JC the only way to add some sockets to their rings?

I have made JC the needed prof for all my 10s and 20s, the other being engin. JC fills the 2 ring slots with 2 sockets plus 1 trinket with 1 socket (boar) for my hunters, previously I use 2 sockets of the deep for the neck, but have since go on to try ROTP mastery JC necklace with single socket.. I have only been trying out hunters so far in these 2 brackets. JC is not needed for necklace and rings as they are bind on equip but because the boar trinket is bind on pickup, is the only reason why I needed JC
 
I know there are a lot of guides out there, but what professions do you guys run?

Engi is obviously a must, what about the other slot?

Just want to know what my options are.
