I've always had an allure towards taming pets, whether it's through exploitation or exploring a database until I discover an anomaly. One of the most rewarding parts of it is doing so on low-level characters. Moving forward I would like to share my discoveries every now and then until I have enough to make a compendium of sorts.

1) As shown in the screenshot (thanks Karin) the 7.2 spirit beasts scale down to 13 (no need for less atm) and are obtainable by opposite factions, even at low levels. Luckily the NPC's surrounding their corresponding faction's tame only alert the guards that appear well after the time it takes to tame any beast. The spirits are neutral so if a horde player activates the egg/feather, any faction can tame.

2) The big kodo model belonging to Arra'chea is also used by a non* rare lvl 10-11 spawn in the desolace. It's called Recovering Kodo and scales the same height as Arra'chea when tamed. The only downside, if you care, is it won't keep the apostrophe'd name (bothers me to hell tbh) This basically means you don't need to go to Mulgore and compete with players/spawning. Makes it super convenient for the Animal Companion talent since it allows 2 pets.

3) Kodos (Kodi?) most, if not all kodos have slower attack speed than pretty much every other pet in the bracket which has the baseline attack speed. Idk if that has tangible impact on damage but I know for Barbed Shot increases speed out the wazoo for pets. Also the animal companion 2nd pet keeps said speed. They're literally the pet pulled out the stable I noticed.

4) Once party sync is live, if players are truly allowed to que for lower level bg's, this opens up a unique pet ability avenue for hunters since they're part of the class and scale down with the player (tested in ptr myself). Most hunter pet abilities activate at 20, though. One cool use for this is the feathermane tames give a non-exotic hunter the ability to slow fall, which is otherwise exclusive to an exotic family, has no cooldown and lasts 30 seconds. Idk how long parachute cloak charges but with feathermanes you can disengage+slowfall every time! Also pets like broken-tooth(1.0), Chimaeron(4.0) and Deth'tilac (0.5) have wacky attack speeds you may want to theorycraft once PS drops.
